Pumpkin & Sage Soup

Orange in color, just like that of sunset!!

Ingredients:
Pumpkin, chopped- 250 gm
Garlic, crushed- 3 flakes
Olive oil, plus extra to drizzle- 20 ml
Cinnamon sticks- 2 nos
Vegetable stock- 80 ml
Sage leaves, chopped (use bottled one, if fresh is not available)- 5-6
Salt & pepper, as required

Method:
Season pumpkin with salt, pepper & olive oil. Place on a baking tray with cinnamon sticks & rub with sage leaves & garlic.
Bake in a preheated oven at 170°C for 30 minutes or till soft & mushy.
Remove garlic, cinnamon & sage leaves & puree the cooked pumpkin.
In a pan, heat vegetable stock & the puree. Add cheese.
Once the cheese is blended, serve drizzled with some olive oil.

Its one of the best soups I have come across!!
