Orange & Carrot Soup

Perfect on a cold windy day!!

Ingredients:
Carrots, chopped- 6 nos
Onion, chopped- 1 nos
Vegetable stock (can use normal water instead)- 500 ml
Butter- 15 gm
Orange zest & juice- 1 nos
Bay leaf- 1 nos
Butter/ oil
Salt & pepper

Method:
Boil carrots.
Heat butter/ oil in a pan. Sauté onion. Add stock, orange zest, bay leaf. Boil. Remove bay leaf.
Add salt, pepper & orange juice. Puree it. Reheat.
Serve hot with bread croutons.

Sip.. sip…..all the way!!
