Mushroom & Onion Soup

A light soup with the goodness of mushroom!!

Ingredients:
Mushroom, chopped- 250 gm
Onion, finely chopped- 2 nos
Nutmeg (jaifal) powder, a pinch
Milk-320 ml
White flour (maida)- 1 tbsp
Cloves (laung)- 4 nos
Bay leaf- 2 nos
Butter- 2 tbsp
Fresh cream- ¾ cup
Salt & black, white pepper, as required

Method:
Boil milk with black pepper, cloves & bay leaf. Strain it & keep the milk warm.

Heat butter in a pan. Sauté mushroom, onion till well cooked. Mushrooms cook fast so keep an eye on it.

Add maida & sauté till it cooks. Do not burn it. Slowly add milk & stir continuously so no lumps are formed. Cook for 5-6 minutes.

Let it cool & blend it into a puree. Boil it. Add cream, salt, white pepper & nutmeg powder. If the soup is thick, add little milk. Mix.

Garnish with cream!!
