Ingredients:
Sponge cake- 1
Cherries, canned- ½ tin
Whipped cream- 1 cup
Castor sugar- 3 tbsp
Dark /plain chocolate, grated- 4 tbsp
Vanilla essence- ½ tsp
Method:
Icing - beat the cream over a tray of ice cubes with a hand beater. Do not over beat. It should form soft peaks. Fold the sugar & essence. Mix gently. Put some icing in a icing gun. Leave the rest in the bowl. Keep both in fridge.
Slice the cake into 2 horizontal halves. Sprinkle 2-3 tbsp cherry syrup on each half. Allow to soak for 10 minutes.
Spread the cream icing on lower half. With icing gun decorate top edge. Spread chocolate flakes all over & decorate with cherries.
If icing gun is not available, spread the icing on the cake & spread it out evenly with a knife.
Enjoy in the evening with tea or coffee.
