Grilled Cottage Cheese with Asparagus & Tomato Fondue

Ingredients:
For tomato fondue:
Olive oil- 15 ml
Onion, chopped- 15 gm
Cherry tomato- 40 gm
Tomato juice- 30 ml
Garlic, finely chopped- 5 gm
Salt & pepper, as required

For cottage cheese with asparagus:
Cottage cheese (paneer), cut into squares- 240 gm
Asparagus spears, blanched- 6 nos
Cajun spice- 10 gm

Method:
Tomato fondue- Heat olive oil & sauté onion, garlic. Add tomatoes, salt & cook on low heat till the tomatoes are pulpy. Add pepper, tomato juice & cook till the sauce gets a thick, chunky consistency.

To proceed- Season paneer with Cajun spice & 5 ml olive oil. In a well heated frying pan, grill the seasoned paneer to golden color.
Sauté blanched asparagus separately.

Serve grilled paneer with sauted asparagus, topped with cherry tomato fondue.
