Baked Eggplant with Herbs

Eggplant never tasted this good!

Ingredients:
Eggplant (brinjal), sliced lengthwise- 1 nos
Zucchini, sliced lengthwise- 1 nos
Onion, sliced- 2 nos
Seasoning
Oregano, thyme, olive oil

Method:
Preheat oven at 400°C.
In a baking tray, arrange eggplant, zucchini, onion. Coat well with thyme, oregano, olive oil.
Roast in an oven for 30-35 minutes.
