One of my favorite cakes!!
Ingredients:
Maida- 1½ cup
Curd- 1 cup
Castor sugar- ¾ cup
Baking soda- ½ tsp
Baking powder- 1¼ tsp
Butter, melted/oil- ½ cup
Frozen cherries (optional)- ½ cup
Coco powder- 1 tbsp
Vanilla essence- 1 tsp
Method:
Preheat the oven to 200° C for 10 minutes. Beat sugar & curd for 5 minutes on high speed.
Add baking powder & baking soda, beat in a low, & allow to stand for 3 minutes. You will find that bubbles appear.
Beat in melted butter, essence & coco powder. Slowly add the flour in 4 lots, blending well after each addition. Pour this in a greased tin & top with frozen cherries.
Bake at 200°C for 10 minutes, reduce temperature to 175°C & bake for 40-45 minutes or till a tootohpick inserted into a cake comes out clean. Cool the cake for 20-30 minute.
Slice it, eat it and enjoy one of the tastiest eggless chocolate in the world!
